Hello, my name is Angelica Arroyave, I work as a coffee analyst and cupper of specialty
coffee for an association of small coffee farmers, called Asprocafe Ingruma.
Los Cuernos del Diablo is the name of our coffee. It is from the Caldas zone in Colombia.
This product is special because it is cultivated organically by 217 farmers with love and through hard work.
This makes your coffee one of the best coffees in the world.
The varieties include typica, bourbon and varedad Colombia. Today, we are going to prepare our coffee in a method
called the Chemex, a well-known method in the market. It's my favorite method because
it brings out the best organaleptic [aromatic and flavor] attributes in any coffee.
For this we need a Chemex and we need a filter that is specifically used for a Chemex.
This retains the finest elements [in the coffee], producing a smooth and aromatic cup.
We need a scale and we need a timer. The first thing we do is to pre-heat [the Chemex] so that
the Chemex doesn't get cold. We then rinse the filter to eliminate any paper flavors, which has an unpleasant flavor.
After we wet the filter, we remove the excess water and we begin to prepare our beverage.
We are going to use 35 grams of our coffee.
Preparing our coffee is a celebration, a ritual that is done with care and affection.
To continue, we level the coffee in the filter and make a small hole in the center to allow for pre-infusion.
We add 35 grams of water to our coffee. We do this by weight and for this we need a scale.
Then we wait for the bloom, which represents a flower when it blooms on its branch. Then we wait for 45 seconds.
After 45 seconds we add water that we have preheated to approximately
92 degrees Celsius [197.6 Fahrenheit]. After 45 seconds we will begin to add water, we
want to wet all of the coffee and this is done in small circular movements, clockwise.
Smoothly [we pour the water] until we reach 595 grams of water.
The type of grind that we are using for this method is medium-coarse for a Chemex.
Our coffee is grown not just by one person, but by families where the whole family participates, cultivating our coffee with love. Especially for you the customer, it is a special drink.
After we add the water we stir it smoothly 3 times.
We wait until the coffee passes through the filter. Here we have the coffee in various commercial forms:
[Parchment] This is the coffee that is brought to the co-op. [Green coffee] This is the kind of coffee Equal Exchange receives.
And finally, the roasted coffee, which is then ground so that you can enjoy good coffee.
Chemex preparation takes between 4-5 minutes.
We wait as the coffee finishes passing through the filter. And finally we have our drink,
with excellent acidity, good sweetness, and with a grapefruit flavor. Here we are with our drink.
